The Softest Rice Krispies
Time: 20 minutes
Serves: 20-24
Ingredients
- 12 Tbsp of unsalted butter
- 2 10-16oz bags of marshmallows (more never hurts)
- 3/4 tsp of vanilla
- 1/2 tsp of salt
- 8 1/2 cups of rice krispies
- M&Ms (optional, see tips)
- 2 Tbsp peanut butter (optional, see tips)
- Butterscotch and chocolate chips (optional, see tips)
Instructions
- Line 9x13 pan with aluminum paper and grease foil.
- Separate 2 cups of marshmallows and set aside.
- Add butter to a large pot and begin to melt on medium heat, stirring occasionally until melted and it begins to turn golden and smell nutty.
- Once melted, add the rest of the marshmallows (keeping the 2 cups aside) and stir until completely melted. Once the marshmallows are melted, add salt and vanilla and stir until combined. Remove the pot from the heat and add rice krispies, stirring as you add.
- Add mixture back to low heat and stir in the 2 cups of marshmallows until partly or fully melted (whichever you prefer).
- If you choose to add M&M's, add them here, mixing until combined.
- Pour rice krispies into greased pan and cool for at least an hour.
- Once cooled, pull aluminum foil out of the pan, cut and enjoy!

Tips:
- You can divide the mixture in half with two 8x8 pans or have extra large rice crispies and put the entire mixture into one 8x8 pan.
- Make rice crispies with a wooden spoon because they do not transfer heat like metal spoons, and they won't scratch your pans!
- I like to add M&Ms to the rice crispies because, who doesn't like chocolate?! You can add these right before you pour the mixture into the pan. Make sure you do not over-mix them or they will begin to melt.
- Another option we often do is melt about 3 Tbsp of peanut butter into a microwavable safe bowl and heat until it's soft, 30-60 sec. Take a spoon and dip into the peanut butter and slowly drizzle over the rice crispies.
- Our favorite option is creating a butterscotch chocolate frosting. Take chocolate chips (milk or semi-sweet) and butterscotch chips (about 1/4 cup of each) into a microwavable safe bowl and melt until soft. Then repeat the same steps as the peanut butter!
