Zesty 20-Minute Southwest Soup
This was an easy soup to whip up with leftover pulled pork we had from sliders earlier in the week. You could also use chicken, beef or sausage - whatever you have on hand!

Serves: 6
Ingredients
- 16oz jar salsa verde
- 2 cups reduced-sodium chicken broth
- 15oz can black beans, drained and rinsed
- 15oz can fire-roasted diced tomatoes
- 1lb shredded smoked pork
- Red pepper flakes to taste
- Salt and Pepper to taste
Instructions
- Cook salsa verde in a large saucepan over medium-high heat, occasionally stirring for 2 minutes
- Stir in chicken broth, black beans, tomatoes, pork and bring to a boil
- Reduce heat to medium, and simmer for 10 minutes, occasionally stirring
- Season with red pepper flakes, salt and pepper to taste
- Top with avocado or sour cream and serve immediately
