Ooey Gooey Scotcharoos

Time: 15 minutes Serves: 12

Ingredients:

  • 1 cup white sugar
  • 1 cup white corn syrup
  • 6 cups Special Kay cereal
  • 1 1/2 cups of peanut butter
  • 1 tsp vanilla

Topping:

  • 6oz chocolate chips
  • 6oz butterscotch chips
  • 1/3 cup peanut butter

Instructions:

Grease 8x8" pan and set aside. Place Special Kay cereal into a large bowl.

In a medium-sized, microwavable safe bowl, add sugar and syrup then microwave for 1:20min. Remove from microwave and stir until sugar is dissolved. Add peanut butter and vanilla to syrup mixture and mix until smooth.

Pour mixture over Special Kay and mix quickly as it begins to harden. Once mixed, pour into greased pan and smooth out.

Now to make the topping: combine chocolate chips, butterscotch chips and peanut butter into microwaveable safe bowl and microwave for 1 minute. Remove and stir. If chips are not melted, repeat for another 30 sec until combined.

Once combined, pour over Special Kay mixture and cool for 30 minutes.

Tips:

  • Who likes their Scotcharoos gooey? ME! When combining the syrup and sugar, add a little extra syrup - this will make the bars soft and delicious!
  • Feel free to place in the fridge to cool faster - they will still taste just as good!
  • If you want more of a chocolate flavor, leave the peanut butter out of the topping - you will still have enough to cover the bars without it!
  • Microwaving the mixture for 1:20 (no more, no less) will guarantee your bars to be soft! Several recipes call for boiling the mixture and often times it will be over-boiled, leading to hard bars.
