Creamy One-Pot Tuscan Chicken Pasta
This creamy pasta is perfect for those cold evenings when you don't want to spend hours in the kitchen.

Ingredients
- 1 Tbsp olive oil
- 4 cloves minced garlic
- 1lb diced chicken breasts
- 1tsp thyme
- 1tsp oregano
- crushed red pepper flakes to taste
- 16oz uncooked penne pasta
- 1/2 cup chopped roasted red pepper
- 4 cups low-sodium chicken broth
- 1/2 cup heavy cream
- 3 cups spinach
- Salt and pepper to taste
Instructions
- Place a large pot on medium-high heat and add olive oil.
- Once hot, add garlic and chicken and cook until no longer pink.
- Add salt, pepper, thyme, oregano, crushed red pepper flakes, and stir.
- Add uncooked pasta, roasted peppers, and broth, then bring to a boil.
- Reduce heat to low and cover for 12-14 minutes or until pasta is cooked.
- Add heavy cream and spinach, then stir until it's creamy and spinach is wilted.
Tips
- To save time, make your chicken ahead of time and add to the pot when you add the noodles.
- If you like spicy, add fire-roasted red peppers.
- Shell or elbow pasta work great for this recipe too!
