Creamy One-Pot Tuscan Chicken Pasta

This creamy pasta is perfect for those cold evenings when you don't want to spend hours in the kitchen.

Serves: 8

Ingredients

  • 1 Tbsp olive oil
  • 4 cloves minced garlic
  • 1lb diced chicken breasts
  • 1tsp thyme
  • 1tsp oregano
  • crushed red pepper flakes to taste
  • 16oz uncooked penne pasta
  • 1/2 cup chopped roasted red pepper
  • 4 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 3 cups spinach
  • Salt and pepper to taste

Instructions

  • Place a large pot on medium-high heat and add olive oil.
  • Once hot, add garlic and chicken and cook until no longer pink.
  • Add salt, pepper, thyme, oregano, crushed red pepper flakes, and stir. 
  • Add uncooked pasta, roasted peppers, and broth, then bring to a boil.
  • Reduce heat to low and cover for 12-14 minutes or until pasta is cooked.
  • Add heavy cream and spinach, then stir until it's creamy and spinach is wilted. 

Tips

  • To save time, make your chicken ahead of time and add to the pot when you add the noodles.
  • If you like spicy, add fire-roasted red peppers.
  • Shell or elbow pasta work great for this recipe too!
