Delicious BBQ Chicken Flatbread
These are fast, easy and most importantly, delicious! The best part is, you can use almost anything in your fridge as toppings and they will turn out amazing. If you want to make them low calorie, use Bread Thins instead of naan bread. Just as tasty with fewer calories.
Serves: 4 Time: 35 minutes
Ingredients:
- 6-8 slices of mini naan bread or 4 regular sized
- 3-4 chicken breasts
- 1 Tbsp of olive oil or coconut oil
- 1 white onion
- 20 cherry tomatoes
- 6-8 mushrooms
- Barbecue sauce
- Arugula
- Chipotle mayo (optional)
- Cheese (Optional)
Instructions:
Preheat oven to 400°
Place chicken on a large sheet pan and bake for 22-26 minutes. While chicken bakes, chop onion and mushrooms into 1/4" size pieces, cut tomatoes in half.
Remove cooked chicken and place naan bread directly on oven racks and bake until they begin to brown, about 6-10 minutes (keep an eye on them so they don't burn) depending on size. While chicken cooks, place a medium sized sauté pan over medium-high heat and add oil. Once hot, add onion and sauté for 3 minutes. Next, add tomatoes and mushrooms and cook until tomatoes become wilted.
While the onion mixture cooks, cut chicken into bite-sized pieces. Place naan bread onto a clean working space and add 1 1/2 Tbsp of barbecue sauce (more or less to taste) to each piece of bread (you can also add the chipotle mayo here if using) and spread evenly. Next, add chicken pieces and onion mixture to each flatbread and top with cheese (if using).
Place flatbreads directly onto oven rack and cook until cheese is melted, about 2-4 minutes. Carefully remove flatbreads and top with arugula. Enjoy!

Notes:
- I like to substitute chicken breasts with chicken tenders. Why? Since the chicken already cut into strips, it makes cutting the it into bite-sized pieces that much easier!
- Arugula is a game changer. Don't skimp on this, not only does arugula have several health benefits, it also adds the perfect finishing touch to this recipe.
- Did you know cutting vegetables can cause some nutrient loss when their cells are sliced straight through? It's best to tear leafy vegetables and herbs so their cells stay more intact. Don't dirty another knife, just use your hands!
- Need to save time? Cook the chicken ahead and keep in your fridge or freezer until you need it. This cuts the cooking time in half!
- Sometimes it's nice to have a low-calorie meal and swapping flatbread with Bread Thins does just that while still tasting delicious.
