Creamy Crock-Pot Tortellini Soup
Serves: 6
Time: 4-5 hours on high, 7-8 on low
Ingredients:
- 1Tbsp olive or coconut oil
- 1 cup chopped onion
- 2 Tbsp minced garlic
- 1 Tbsp Italian seasoning
- 6-7 cups chicken broth
- 3 14oz of can diced tomatoes (42oz in total)
- 1lb uncooked ground Italian sausage (sweet, mild or hot)
- 10oz small, frozen tortellini
- 1/2 cup shredded parmesan cheese
- 4 cups baby spinach
- 3/4 cup heavy whipping cream (optional)
- Salt and pepper to taste
- Basil for garnish (optional)
Instructions:
Dice onion. Place large sauté pan over medium heat, add oil, sausage and onion to pan and cook until sausage is not pink, about 6 minutes. Once cooked, add minced garlic and Italian seasoning to sausage blend, stir to combine and cook for 1 minute. Drain excess grease if needed.
Add seasoned sausage blend, chicken broth and tomatoes to a large crockpot and stir to combined. Cook on low for 7-8 hours or on high for 4-5 hours.
30 minutes before cooking time is done, change crockpot to high and add tortellini, cream, spinach and shredded parmesan. Cook until tortellini floats to the surface.
Once tortellini is cooked, stir and add salt and pepper to taste. Garnish with basil or parmesan and enjoy!

Tips:
- This can also be made with ground hamburger or turkey.
- Set a reminder in your phone to make sure you don't forget to add the tortellini, cream, spinach and cheese.
- The cream is not a necessity but it makes the soup so creamy, it's hard to opt out.
- If your tortellini is not frozen, add to crock pot until heated through, then serve.
